Breakfast Cookies

I can't even begin to tell you how much my family loves these!  


Breakfast Cookies

Mix:
2 cups whole grain cereal flakes (like wheaties or total) Crushed
1/4 cup whole wheat flour
1/4 cup unbleached all purpose flour
1/4 cup wheat germ
1/2 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
(mix dry ingredients & set aside)

*in a separate bowl mix
1 large egg
1/2 cup brown sugar
1/4 cup canola oil
2 tsp pure vanilla extract
3/4 cups low-fat ricotta cheese

Add wet ingredients to dry and mix just enough to moisten. Drop by tablespoonfuls onto an oiled baking sheet. Flatten with the back of a fork & dust with Cinnamon sugar. Bake for 15-20 min in pre-heated 400 degree oven.
Extras can be frozen for a quick breakfast or snack.
