Pizza Dough

Pizza Dough from Quick and Easy Vegetarian Cookbook 
Mix:

1 1/3 c warm water
1 1/2 packets of quick rise yeast
2 tsp sugar

let the mixture sit 10-15 minutes or until puffed up

Using your dough hook with a KitchenAid mixer, combine:
3 cups flour + 3 TB flour
1 TB cornmeal

add

puffed up yeast mixture, and mix on speed 3 or 4 until well combined.

add

4 tsp olive oil.....

(Here is my favorite part of the recipe) Turn the mixer up to speed 6 and whomp it good for about 4 minutes.



Remove dough hook, add two TB cormeal to coat the outside and form a ball. Cover and alow to rise for 1 hour.

After the dough has risen you can put it into the fridge until 1 hour 30 minutes before you want to eat. 

When you are ready, dump the dough onto a flour covered board/ counter and roll out. Let rise for 1 hour.

While it's rising: make your sauce and prepare your toppings.



My sauce:
1 can diced tomatoes
2 cloves garlic minced
1 tsp basil
1 tsp oregano
salt & pepper to taste

- blend it all together in a food processor and refrigerate until needed.

I shredded a chicken-breast and used a mixture of mozzarella, parmesan, and cheddar cheese for this pizza.

When your crust has risen, poke it several times with a fork and put it into a preheated 475 degree oven for 3 minutes, remove crust and add sauce and toppings, return to the oven for an additional 14 minutes. ENJOY!
